What the two finishes actually are

Mirror polished means the steel has been buffed to a reflective surface with progressively finer abrasives until the scratch pattern is too fine to see. It is uniform, it reflects, and every new scratch is visible precisely because the surface around it is not.

Brushed means the surface carries a deliberate, directional fine-grain pattern. It is less reflective, and a new scratch has to compete with thousands of intentional ones to be noticed. That is the whole mechanism: brushed finishes do not resist scratching, they camouflage it.

Neither affects cooking. The finish is on the outside of the pan, and the interior of a clad pan is a separate surface — usually 18/10, usually lightly polished regardless of what the exterior looks like. Heat conduction happens through the bonded layers, not the finish. Anyone telling you a brushed exterior heats differently is describing something that is not happening.

The cleaning difference is the real one

Here is the practical consequence most buying guides miss. Bar Keepers Friend is the standard fix for heat tint and fond staining on stainless, and the powder is mildly abrasive. On a brushed exterior you can work it along the grain and the result blends in. On a mirror-polished exterior, the same scrub leaves a permanently dulled patch — you have traded a stain for a matte mark.

That means a polished pan either gets cleaned more gently, or it stops being mirror-polished. Neither is a disaster, but it is worth knowing before you buy a set you intend to keep looking new. A brushed finish has one cleaning disadvantage: the grain holds a thin film of grease more stubbornly than a mirror does, so it benefits from wiping along the grain rather than across it. That is a minor annoyance against a major advantage.

Why the interior finish matters more

The finish question people should be asking is about the inside of the pan, not the outside. Two things actually matter there.

Whether rivet heads protrude. Riveted handles put two bolt heads inside the cooking surface, and fond collects behind them. Welded handles — Demeyere, and most commercial pots — leave the interior uninterrupted. That affects cleaning far more than any exterior polish: see riveted vs welded handles.

Whether the surface has been treated. Demeyere's Silvinox strips free iron out of the steel, which is a chemical change rather than a mechanical finish, and it is the only thing in this category that slows cosmetic aging rather than disguising it.

Heat tint shows up differently

The rainbow sheen that appears on an overheated stainless pan is a microscopically thin oxide layer, not damage. On a mirror-polished surface it is dramatically visible because the surface is reflective; on a brushed surface it reads as a faint warm tone.

This is purely cosmetic in both cases, it is harmless, and it comes off with an acid cleaner. The relevant point for a buying decision is that a polished pan will make you aware of every slightly overheated moment, and a brushed one will not. Full explanation in stainless steel pan discoloration.

Which should you buy?

Buy brushed if you stack your pans, you use a dishwasher, you clean with anything abrasive, or you expect to own the pans for a decade and care how they look at the end of it.

Buy polished if it is attached to the better pan. This is the important caveat: finish is the least consequential specification on a pan, well behind cladding, oven ceiling, gauge and the dishwasher rating. Do not pay a premium for brushed alone. Where it comes free — Calphalon's brushed tri-ply set, or D5 if you wanted five plies anyway — take it. Where it is the only reason to spend more, it is not worth it.

This is the cleanest demonstration of the argument, because the same brand sells the same pan in both finishes. D5 is brushed; D3 is polished. The specs that matter — 600F and broiler safe, induction, handwash only, lifetime warranty — are shared.

Is brushed or polished stainless steel cookware better?

Brushed hides scratches, fingerprints and heat tint, so it looks better after a few years of real use. Polished looks better in the box and shows every scuff afterwards. Neither affects how the pan cooks — the finish is on the exterior and heat moves through the bonded layers underneath.

Does a brushed finish resist scratching?

No, it camouflages scratching. A brushed surface carries a deliberate fine directional grain, so a new scratch blends in among thousands of intentional ones. A mirror-polished surface is uniform, which is exactly why each new mark stands out.

Can you use Bar Keepers Friend on polished stainless cookware?

You can, but the abrasive powder will dull a mirror-polished exterior where you scrub, trading a stain for a permanent matte patch. The liquid formulation is gentler. On a brushed exterior you can work along the grain and the result blends in.
