Why the spread is bigger than it looks

Five hundred and fifty degrees separates the bottom of that table from the top, and price does not predict position. Demeyere costs more than All-Clad and is rated 100F lower. Misen costs less than All-Clad and is rated 200F higher.

Two thresholds matter in practice. Most home ovens top out around 500F, so every pan here handles ordinary roasting. Broilers routinely exceed 500F and can approach or pass 600F, which puts the 500F pans outside spec and the All-Clads at the margin.

So the question is not "how hot can this pan get". It is "do I broil?". If you do, the 800F brands are the ones with real margin, and if you cook on a grill, Hestan is the only one with genuine headroom.

The lid caps the pan

This is the most common way people unknowingly exceed a rating, and almost nobody publishes the number.

Glass lids are typically rated far below the pans they come with, often around 350F against a 500F or 600F body. Cover a 600F pan with a 350F lid in a 450F oven and the lid is out of spec even though the pan is fine. Glass lids also crack from thermal shock more readily than steel.

Stainless lids share the pan's rating and survive being dropped. If you finish anything covered in the oven, a stainless lid is the cheapest meaningful upgrade in this category — and it is a reason to prefer sets that supply them, as discussed in best stainless saucepans.

Handles are the other cap. Any pan with a plastic, silicone or wooden handle component is rated by the handle, not the metal.

Exceeding the rating is a warranty event

The published ceiling is not a safety limit — nothing explodes at 601F. It is the line the manufacturer uses to decide whether damage is yours or theirs.

All-Clad's warranty excludes discoloration, warping or metal separation due to high heat or prolonged heat exposure when empty, and excludes damage including warping and overheating arising from misuse. Made In's excludes warping or damage from prolonged use of high or excessive heat.

Run a 500F pan under a 600F broiler and the resulting discoloration or distortion sits squarely in those exclusions. That is what the number is actually for, and it is why we treat the oven rating as one of the four things that decide a buy-it-for-life purchase.

Heat and longevity

Repeatedly running a pan near or above its ceiling does two things, one cosmetic and one structural.

The cosmetic one is heat tint: the rainbow oxide layer described in pan discoloration. Harmless, removable with an oxalic cleanser, and not worth worrying about.

The structural one is warping. High heat, especially in an empty pan, drives the base and walls to different temperatures and eventually the laminate takes a permanent set. That is the failure that genuinely retires clad cookware, and it is covered in warped stainless steel pan.

Practical rules that keep you clear of both. Know your pan's number and your lid's number. Never preheat an empty pan under a broiler. Move pans from a hot oven to a dry surface, not a wet worktop. And buy the headroom if your cooking needs it — 200 extra degrees costs less than replacing a warped pan and arguing about whose fault it was.
