Key takeaways
- All-Clad publishes 600F; Demeyere Industry 5 publishes 500F. That is a significant gap at these prices.
- Demeyere is dishwasher safe; All-Clad is handwash only.
- Demeyere has Silvinox, the only surface treatment here that measurably slows cosmetic aging.
- All-Clad is the only pan in this category with published abuse-test evidence, and it is lighter.
- Demeyere is thinly distributed in US retail, which matters for replacing a piece in a decade.
The quick answer
All-Clad optimizes structure: rivets, handle joins and the ability to survive being knocked around for decades. Demeyere optimizes surface and mass: a finish that resists aging, and a gauge built for commercial kitchens.
For most buyers All-Clad is the better purchase, mainly because Demeyere's 500F oven rating is hard to defend at its price. Choose Demeyere if you want dishwasher convenience at the premium tier, or if you genuinely care how the cookware looks in twenty years.

What Silvinox actually gets you
Silvinox is a patented electrochemical surface treatment. Demeyere publishes that it maintains a flawless, silvery-white finish, resists fingerprints, and holds up against harsh detergents and strongly acidic foods even after years of use.
The failure mode it addresses is real and under-discussed: stainless cookware ages cosmetically. A decade of detergent and acid produces a dulled, faintly yellowed cast on ordinary 18/10, and a great many perfectly functional pans get replaced because they look tired rather than because they stopped working.
Whether that is worth the premium depends on whether your cookware is on display and whether you intend to keep it for decades. On a buy-it-for-life purchase, wanting to still want the object in twenty years is a legitimate criterion.
The 500F rating is the problem
Demeyere Industry 5 is rated to 500F — the joint lowest in this category, alongside Tramontina and Zwilling Spirit — at a price above All-Clad and comparable to Made In and Heritage Steel, both of which publish 800F.
Because heat damage is excluded from every warranty here, the ceiling determines whether a failure is yours or the manufacturer's. Paying a premium for 100F less headroom than All-Clad is a poor trade for anyone who finishes food under a broiler, and no amount of surface treatment compensates. If you cook entirely on the hob it is irrelevant — see oven-safe temperatures by brand.
Weight: quality on the shelf, fatigue in the kitchen
Demeyere is the heaviest cookware we cover, and it is a genuine double-edged property. Mass helps on a cycling electric or induction burner, where it averages out the pulsing and holds a steadier simmer, and it helps under a hard sear where stored energy reduces the temperature drop.
It hurts everywhere else. A 12-inch Industry 5 is tiring to toss food in and awkward to pour from one-handed. All-Clad's tri-ply is meaningfully lighter and more manageable for everyday cooking.
How long will each last?
Structurally, All-Clad has the evidence. America's Test Kitchen's protocol — 500F pans into ice water, then three strikes against concrete — left it with barely a ding while competitors dented and one handle nearly detached. Demeyere is built to a commercial spec and is almost certainly excellent here; we simply have no published result, which is unproven rather than disproven.
Cosmetically, Demeyere wins clearly. Silvinox is the only thing in this category that directly addresses the aging that retires good-looking pans.
On coverage risk, Demeyere's dishwasher-safe status removes one common way owners unknowingly void their terms, while its low oven ceiling adds another. All-Clad's handwash-only requirement is the mirror image.
On serviceability, All-Clad wins. It is widely distributed in the US and Demeyere is not, and the most common way a matched set degrades is a broken lid with no available replacement. Over a twenty-year horizon that is a real consideration.
Which should you buy?
Buy All-Clad for oven headroom, lighter handling, published durability evidence, US manufacture and easier serviceability.
Buy Demeyere for dishwasher convenience at the premium tier, for Silvinox if cosmetic longevity matters, or if you cook long and slow on a cycling burner where mass helps.
Buy neither if the 500F-versus-600F question is what you are stuck on — both are beaten by Made In and Heritage Steel at 800F, for less money than Demeyere.

Frequently asked questions
Is Demeyere better than All-Clad?
On surface longevity and build mass, yes, and it is dishwasher safe. On oven rating, weight, published durability evidence and US serviceability, All-Clad. The 500F ceiling is Demeyere's real weakness.
Is Demeyere dishwasher safe when All-Clad is not?
Yes. Demeyere publishes Industry 5 as dishwasher safe and the Silvinox treatment specifically resists harsh detergents. All-Clad specifies handwash only for its bonded stainless lines.
What temperature are Demeyere and All-Clad oven safe to?
Demeyere Industry 5 is 500F; All-Clad is 600F across D3, D5 and Copper Core. Made In and Heritage Steel both publish 800F for less than Demeyere costs.
Is Demeyere too heavy for home cooking?
It is the heaviest cookware we cover. The mass helps hold a steady simmer on a cycling burner and under a hard sear, and it is tiring in a 12-inch pan.
Is Silvinox worth paying for?
If your cookware is on display and you intend to keep it for decades, yes. It is the only treatment in this category that measurably slows the dulling and yellowing that makes older stainless look tired.
Which is easier to get replacement pieces for?
All-Clad, by a wide margin. It is widely distributed in US retail and Demeyere is not. The most common way a set degrades is a broken lid with no available replacement.
