Stainless Steel Cookware FAQ

Why does food stick to my stainless steel pan?
The pan was not hot enough when the food went in. Stainless is microscopically porous and those pores close as the metal expands with heat. Food added early settles into open pores and bonds mechanically as it cooks.
How do I know when a stainless pan is hot enough?
Flick a few drops of water into the dry pan. If they hiss away or scatter into small beads it is too cool. When a drop forms one mercury-like ball that glides without boiling, the pan is at temperature.
Do you need to season a stainless steel pan?
No. Stainless will not hold a seasoning layer the way cast iron does, because its surface is smoother and its chromium oxide layer is passive. Correct preheating replaces seasoning entirely.
Which stainless steel pan should I buy first?
A 12-inch fully-clad skillet, unless you cook mainly for one or have small burners, in which case a 10-inch. A 12-inch can do a 10-inch's job; the reverse is not true.
What is the second pan I should buy?
A 3-quart saucier, not another skillet or a third saucepan. It has no right-angled corner for food to scorch in, and almost no cookware set includes one.
Is 5-ply better than 3-ply?
Not straightforwardly. More plies add mass and steadiness but slow the pan's response. Steadier helps a long braise; slower hurts a pan sauce. It is a trade, not an upgrade.
Does more ply mean food sticks less?
No. Sticking is a property of the interior stainless layer and your preheating, both identical between tri-ply and five-ply. Buying more layers will not fix a technique problem.
What is the difference between fully clad and disc bottom?
Fully clad means the bonded layers run from base to rim, so the walls conduct heat. A disc bottom welds an aluminum slab to the base of a pot with single-layer stainless walls that scorch.
What temperature is stainless cookware oven safe to?
It varies by brand from 500F to 1050F. Tramontina, Zwilling Spirit, Demeyere Industry 5 and Cuisinart publish 500F; All-Clad 600F; Made In, Heritage Steel and Misen 800F; Hestan NanoBond 1050F.
Can you put stainless cookware in the dishwasher?
It depends on the brand. Tramontina, Misen, Zwilling, Demeyere, Hestan and Cuisinart publish dishwasher-safe ratings. All-Clad, Made In and Heritage Steel specify handwashing.
Does a lifetime warranty cover a warped pan?
Almost never. All-Clad excludes warping from high heat or heating empty; Made In excludes warping from excessive heat or thermal shock. Lifetime warranties cover manufacturing defects.
Can a warped stainless pan be fixed?
Realistically no. Hammering a clad base risks separating the bonded layers. A mildly warped pan can still be used on gas or for boiling, but it is finished for induction work.
Are rainbow stains on a stainless pan safe?
Yes. Rainbow staining is heat tint, a thin inert oxide layer that refracts light. It does not affect cooking and an oxalic-acid cleanser removes it.
What causes small dark pits in a pan?
Chloride pitting, from salt settling on the base of still liquid and concentrating there. It is permanent. Add salt once the liquid is moving and hot to prevent it.
What is the best cleaner for stainless cookware?
An oxalic-acid cleanser such as Bar Keepers Friend for heat tint and stubborn residue, baking soda for burnt food, and white vinegar for hard-water spots. Avoid steel wool and bleach.
Is stainless steel cookware safe?
Yes. Food touches only the stainless interior, which is non-reactive and stable. The aluminum or copper core is fully sealed between steel layers and never contacts food.
Is expensive cookware actually more durable?
Structurally, yes: heavier gauge, better rivets and longer service history. But the commonest failure is warping from thermal shock, which is a habit rather than a product flaw and ruins expensive pans just as readily.
Which stainless cookware is made in the USA?
All-Clad bonds, engineers and assembles in Canonsburg, Pennsylvania. Heritage Steel manufactures everything including lids in Clarksville, Tennessee. Made In's frying pans are made in Italy.
How long should stainless cookware last?
Thirty to fifty years or more with ordinary care. The cooking surface does not wear. What ends a clad pan is a warped base, loose rivets, or a broken lid with no replacement available.
Should I buy a cookware set or individual pieces?
A set if you are furnishing a kitchen from nothing. Individual pieces in every other case, because a set forces the same quality level on the pan you use daily and the one you use once a year.
